This fresh and delicious dessert is just perfect for a summer day
300g ripe blueberries
1/2 watermelon, cut into cubes or small, thin triangles
300g ripe strawberries, hulled and halved
150 g ripe raspberries (only if in season) or substitute with orange segments, peel and all white pith removed
200g castor sugar
Zest and juice of 2 limes
Natural yoghurt or vanilla bean ice cream
To make the sugar syrup, gently heat the sugar and water in a saucepan over a medium heat until the sugar is dissolved. Remove from the heat and add the lime zest and juice. Add the blueberries. Allow this syrup to cool a little, but not completely.
Prepare the fruits and place on a serving dish or platter. Gently pour the slightly cooled lime syrup over the fruit. Serve with natural yoghurt or vanilla bean ice cream.
